Pickled Herring Recipe Seasonal Delicacy

Pickled Herring
If you enjoy pickled herring and can put your hand on the fresh fish, here is how to pickle it.
I start with 20 lbs of fresh herring (picked up at Victoria Fisherman Helping Kids with Cancer)  www.fhkwc.ca
After filleting I ended up with 9 lbs of fillets
Salting Brine – 1 part salt to 20 parts water (1 cup salt for 20 cups of water)

To add to jars with fillets
8 medium red/yellow onions
4 tbsp allspice
For the pickle:
• 4 cups water
• 6 cups white vinegar
• 1 cup sugar
• 4 tsp allspice
• 4 bay leaves (or 1 California Bay leaf)
• 2 tsp grated ginger
• 1 tsp mustard (ground or seed)
• 2 tsp horseradish
• 1 tsp peppercorns
• a pinch of ground cloves

Cover the fillets in a brine of 1 part salt to 20 parts water (1 cup
salt for 20 cups of water for 9 lbs. of herring fillets) and let sit in the
refrigerator overnight.

In a large pot, over medium heat, combine 4 cups water, 6 cups white vinegar, 1 cup sugar, 4 tsp allspice, 4 bay leaves (or 1 California Bay leaf), 2 tsp grated ginger, 1 tsp mustard (ground or seed), 2 tsp horseradish, 1 tsp peppercorns, a pinch of ground cloves. Once the sugar is dissolved, let cool.

The next day, rinse brined herring.

Slice up the onions

In a jar (I used a combination of pint and quart wide mouth jars), alternate layers of herring and onion, toss in some allspice as you go. Don’t pack the jars to tight.

Top the jars with the pickle. Screw on lids and refrigerate

Refrigerate for a couple of days before eating. Enjoy over the holiday season. Use up the pickled herring within 30 days.

April 24th – some nice chinooks out here

Phillipe, Martin and Gilles from Quebec ventured out with us on April 24 and had a great time. The day started off with some strong NW winds and big seas out front so we ventured down to bear island and alley rock and fish there for a few hours….. fishing anchovies and a small blue, with green stripe nickel goldstar spoon. Martin was on the first fish, it was a high teener and got away to grow some more. Giles got the next one a real nice high teener, so he was able to get the skunk off the boat. We picked up a few more fish and released a few fish, turned out to be a nice day but the winds gradually  picked to over 30 knots, seas getting bigger and white caps all over….     www.wildpacificcharters.com  250-735-9453  Sent from my Samsung Galaxy smartphone.

First trip of 2016

Finally A Rear Station Helm Installed

Finally got a second helm in the stern of the boat… it will make it better when landing a fish instead of relying on the autopilot or running back and forth to forward helm… can’t wait to get out and try it out… Boat going in for a little cosmetic glass work and when it returns it will get a good spring cleaning and start loading it up for launching in the beginning of March. …. get out to get some prawns and also fish in the annual Sproat Lake Loggers Derby they have in Barkley Sound on the first Saturday and Sunday in march. A Little Windy around here…..

Well it sure has been Windy with lots of torrential rains, haven’t seen storm action things like this for awhile, but it is better now than during fishing season. Glad the boat is out of the water and put away for the winter. Sometime in February I will pull the boat out and get out for some prawn and crab fishing as well as fishing around for a salmon or a few. I will move the boat into Ucluelet for April 1st, Ling cod opens up and there will be some nice winter chinooks just waiting for our hooks to swim by and add a little bling in there mouths….

Anxious To Go Fishing

Spring is here and we are getting anxious to go Fishing. Updates are being done on the boat, a diesel Espar forced air heater is being added, both motors have been serviced just a few more touch up things to do, washing & waxing ( Any Volunteers?) and then loading and hauling the boat into Ucluelet.

There has been some boats out fishing around Bear Island and Alley Rock, trying to work around some undesirable weather, when they can get out to our local spots they are getting a few salmon, some rock fish and a couple of halibut have also been caught. Ling cod season opens on April 1st.

Early season is a good time to get out and get a good assortment of red and white meat and some dungeness crabs.
